Chipotle Mexican Grill is an American chain of fast casual restaurants serving bowls, tacos and Mission style burritos that are assembled to order in front of the customer. It was founded by Steve Ells on 13 July 1993, after he had visited taquerias and burrito shops in the Mission District of San Francisco. The company is headquartered in Newport Beach, California, and had about 4,000 locations as of December 2025. Its name is the Nahuatl word for a smoked and dried jalapeño pepper.
